Baking is therapeutic. 'Nuff said. The same goes to sewing, cooking, arranging flowers, etc.
I just love being a wifey. Lol. :)
Anyway made these cookies as buah tangan when visiting my parents last Saturday. A last-minute one sebab the recipe sangat super simple. :D
Ingredients:
1/2 cup of soft butter
3/4 cup of light brown sugar
1 tsp of vanilla extract
1 egg
1 cup of flour
1/4 cup of cocoa powder
1/2 tsp of baking powder
1 1/4 cups of chocolate chips
For the glaze:
1/2 cup of icing sugar
1 x 15ml (tbsp) of cocoa powder, sieved
2 x 15ml (tbsp) of boiling water
1/4 tsp of peppermint extract
Method:
1. Preheat oven to 180 degrees of Celsius
2. Cream butter + brown sugar + vanilla extract + egg
3. Mix flour + cocoa powder + baking powder
4. Combine with cream mixture and fold the chocolate chips
5. Spoon using 15ml tbsp and placed lined baking sheet
6. Bake for 12 minutes and cool
7. Put the glazed in heat until combined
8. Zig zag it using tsp
Notes:
I read somewhere that if you guys whipped the butter first sampai creamy, the cookies or sponge cake will become extra fluffier, flakier and crunchier sebab volume butter dah bertambah (air + butter).
